ERIN GO CUPCAKE


Time to get your Irish on! You simply must try these 
easy and decadent  Guinness Chocolate Cupcakes... 
The depth that the stout beer gives the chocolate combined
 with the light, creamy frosting is simply amazing!



Cupcakes:
1 box of Super Moist 
devil’s food cake mix
1 1/4 cups Guinness beer
1/2 cup vegetable oil
3 eggs

Buttercream Frosting:
1 cup butter, softened
1 box (1 lb) powdered sugar (4 cups)
1 teaspoon vanilla
3 to 4 tablespoons Irish cream liqueur

Heat oven to 350F . Place paper
 baking cup in each regular-size muffin tin

In large bowl, beat all cupcake ingredients with electric mixer on low
 speed for 30 seconds. Beat on medium speed 2 minutes, scraping
 bowl occasionally.  Divide batter among muffin cups.

Bake 18 to 23 minutes or until toothpick inserted  comes out clean.
 Remove cupcakes from pans, cool completely.

Beat butter with electric mixer on low speed until smooth. 
Gradually add powdered sugar, 1 cup at a time, 
beating until combined. Add vanilla and the
 liqueur; beat until frosting is 
light and fluffy.
